Cook’s Note: Supreming citrus sounds fancy, but it just means cutting out the clean fruit segments and leaving the bitter white membrane behind. It makes the relish brighter, prettier, and easier to eat.
Cook’s Note: Cod is delicate. If it sticks at first, give it another minute before turning. Fish often releases more easily once a crust has formed.
Tip: The potato stacks can rest for 15–20 minutes while you finish the cod and relish. They hold together better after a short rest.
